150 g soia hidratata
1,5 l apa
sare

Soia se face pasta la blender impreuna cu o cana de apa.

Pasta obtinuta se pune intr-o panza de tifon mai groasa, si se stoarce foarte bine.

Restul de apa se pune la fiert, se adauga laptele strecurat si un praf de sare. Se lasa 20 minute sa fiarba, la foc mic.

Nota: Se va alege un vas de capacitate mai mare in care se fierbe, deoarece laptele se va umfla.

Se framanta un aluat elastic care se aseaza intr-un vas mai mare si se acopera cu apa rece. Se lasa asa in jur de 3o minute.
Coca se framanta  pana ce apa devine alba. Scurgem apa cu ajutorul unei strecuratoare si reumplem vasul cu apa. Procedeul se repeta pana cand obtinem apa limpede si glutenul format.
Seitanul se poate pune la fiert intreg, taiat felii sau bucatele, sau rulat in folie de plastic alimentara. Se alege o oala suficient de mare, se pun condimentele preferate, sare, boia, dafin, curry si bucati de legume curatate, ceapa, morcov, telina etc.
Se fierbe la foc mic aprox. 30 minute in functie de marimea seitanului. Se lasa la scurs.
Seitanul se mai numeste si carne vegetala si poate fi folosit in orice preparat. De retinut ca absoarbe foarte bine condimentele folosite.
